We recently teamed up with the guys over at Jameson to launch their latest whiskey – Jameson Caskmates IPA Edition. Here’s how we got on…

On Wednesday April 11th 2018, a small crowd of 20 invitees gathered on the Brewtonic balcony at The Bernard Shaw. The stage was set for what was going to a memorable night, our little balcony in the heart of the city transformed into a magical oasis of hops. As the crowd gathered, cherry wood smoke from the BeerBQ subtly scented the air. Chefs Hilary Quinn and Pedro Ferraz were quietly working away in the bunker preparing the veritable feast. A welcome cocktail of Jameson Caskmates IPA Edition, lemon + tonic was served, alongside canapés of heritage tomatoes, beetroot + goat’s cheese and prosciutto + fig.

Once seated, guests were given an introduction from the Brand Ambassador at Jameson to the latest edition of whiskey, as well as hearing from Head Cooper Ger Buckley. The starter of whiskey citrus cured salmon went down a treat – organic Clare Island salmon cured in Jameson Caskmates IPA Edition with plenty of citrus zest, sea salt, brown sugar and herbs. It was served alongside Le Levain sourdough, horseradish crème fraîche and salt baked beetroot. To accompany the starter, we served our own Relax The Cacks, a crisp, fresh citrus IPA to compliment the cured salmon.

Following the starter, the BeerBQ was in full swing with chef Pedro smoking the Four20 hemp ale marinated brisket, which we served with smashed potatoes, house pickles and whiskey barbecue sauce. The Four20 ale was in was in full flow to have with the brisket – clean plates all round!

No great meal is complete without dessert, in this instance we chose to serve a lighter style of dessert – cheesecake mousse with rye brownie and whiskey caramel sauce. A perfect end to the meal, the delicate flavour of the whiskey still very much noticeable. In keeping with the ethos of Brewtonic, where we try to reduce, reuse and recycle whatever we can (like our BeerBQ – upcycled from old kegs) we made our famous spent grain cookies for guests to take home.
