The Back Page, Eatyard, The Shaw, Wigwam, The Square Ball, the Lighthouse, Jam Park, Pot Duggans & MVP are all now regularly growing herbs, flowers, fruit and veg with the end goal of the produce ending up on our plates, our drinks, markets and shops.

Our big picture for this project is to create sustainability in our venues, to provide ourselves with the mint for your mojitos or the basil for your basil smash.

We are still learning ourselves but, we are doing whatever to can to make a step towards a greener Bodytonic.

Or did you know that while our team creates the beers we actually brew them through various breweries that we partner with? Well it’s all true and in the past we have partnered with Rascals, Hopfully, and White Hag Breweries to produce our fantastic beers, which you can find in all our bars.

Well, Rascal’s Brewing has recently moved to a new Brewery at Goldenbridge Estate on Tyrconnell Road in Inchicore, Dublin. Since the move is recent we figured it was a great time to head down and see what our friends at Rascals are up to.

As you approach the brewery you are greeted by the vibrant turquoise exterior with the Rascals logo in large print. Once, inside it opens up into a spacious tap room with numerous choices of places to sit. If you feel like dining at a table and enjoying some delicious pizza from their kitchen you can. But if you just want to cozy up with a pint on one of the couches and play various board games you can as well. Speaking of their restaurant they are one of two known breweries in Ireland who offer a restaurant option right in the brewery itself. Eventually, they look to continue to expand their menu. For the time being though you can find a menu full of savory pizza options, side and large salads, bruschetta, and garlic flatbread.

With the added size that comes with the new location, they will now be able to increase the amount of brewing that occurs as well as spend more time experimenting with new recipes. Early Next year they also hope to start being able to give tours around the facility. For now, stop in Thursday-Saturday for some great food and delicious beers. If you are trying to get there from the center of Dublin it is easy enough to hop on the #68 bus, grab a taxi, or take the Luas on the red line, which stops right near the brewery and is only a 3-minute walk till you can enjoy phenomenal beers and delicious food.

The Lighthouse in Dun Laoghaire will officially open Friday the 19th of October.

We will have all our favourite Brewtonic beers on tap including Four 20 Hemp Ale, Relax The Cacks, and one kept for our seasonal rotations, we all remember our infamous 13 Seconds porter 😍 There’ll be plenty of craft beers along with Dun Laoghaire’s biggest selection of boards games, weekly quizzes & bingo, and of some of the best pizza in Dublin courtesy of The Big Blue Bus.

Our next step in #greentonic is to focus on disposable coffee cups, their use and cost, and how it impacts us all. Some days, there can be up to 12 of us in here at any one time, and we drink a lot of coffee which often means a lot of waste too 😕

 

Not only are regular disposable cups incredibly damaging to the environment because of their plastic coating, they cost your coffee shop a fortune. A disposable cup and lid combo can cost up to €0.35; whereas some reusable coffee cups can cost as little as €3.00. Like this one, which is made with natural bamboo and silicone which can be recycled. What’s even better is some coffee shops offer a discount when you bring your own cup – huzzah!

The pair started earlier this year and made their way around the festival circuit before settling down for the winter in this quiet corner of Dublin 8. Upstairs at MVP is smelling incredible and the food is just wonderful – think the very best of local, seasonal produce from the best suppliers like McNally’s organic farm, Scéal bakery and Lilliput Stores.

 

There’s a great deal of thought, respect and care put into all of their dishes and you can really see this in the beautiful plates they present. Last week featured miso butter roasted Hokkaido pumpkin with chestnut purée, pickled pumpkin, and savoury.

 

Their menu changes weekly and we cannot wait to see what they’ll be dishing up next! Check them out every Thursday, Friday and Saturday from 6pm – 10pm upstairs at MVP.

The team have been putting a lot of focus on creating the perfect Wam beef burger – juicy patty, melted cheese, toppings in all the right places, toasted brioche bun and most importantly, the Brewtonic BBQ they serve alongside them. Who knew burgers could be so tricky to get just right!

 

We source our beef from the renowned F.X. Buckley based here in Dublin and use a custom blend of chuck, rib and rump to make a burger that’s full of flavour and juicy when cooked. The bread we use comes from an artisan sourdough bakery called Roth’s Bakery, our fresh produce is from the established suppliers Vernons and we use Irish cheese and dairy throughout the kitchen.

 

We all know that when it comes to burgers, the chips that go with them are just as important. We offer both potato and cassava fries which are twice cooked and seasoned with a secret blend of spices and salt.

It give punters a chance to sample something a little different, out of the ordinary or just good old tasty beers that we enjoy.


This week at The Back Page, we were giving out samples of the downright delicious Social Hops Wet Hop Wit. It’s made from 16kg of hops grown in Dublin and Wicklow by local growers in conjunction with the Urban Farm Project. Our mates over at Rascals looked after the brewing of this very special beer and they’ve done a remarkable job. They even launched this beer at our very own Beer Fest a couple weeks ago! Wit style beer, crisp and fresh on the palette and tastes of more. Plus knowing where the hops came from (and growing some ourselves!) makes it even tastier. Stall it down to try some for yourself!

October is Irish Cocktail Month and to celebrate Dublin Bar Academy will be hosting their own Irish Cocktail Party, for 20 blips you can taste four different cocktails. And to further the experience, there is a private tasting room where you can learn about the spirit that’s in the glass like Jameson and Dingle Gin.

 

Mistress of Malt – Thursday 18th October, L. Mulligan, Dublin 2

Helen Mulholland is a Master Blender and works with The Old Bushmills Distillery, She’s is responsible for blending some of the world’s most renowned whiskeys and will be sharing her knowledge on stage with Seaneen Sullivan of L. Mulligan Grocers and Whiskey Shop. The event is open to whiskey appreciators of all levels and is sure to be a great evening.

 

The Sunless Garden – Concept Pop Up Restaurant – Sunday 21st October, Hen’s Teeth, Dublin 2

A 12 course tasting menu prepared by Richard Lewis and Jamie Allan set in a themed space called The Sunless Garden which depicts the relationship of a couple from when they first meet. The venue will blend music and visuals with the food to create an effective, emotional ambience which they’re hoping the diner will sense from beginning to end.

 

Whiskey & Cheese Tasting Series – Thursday 25th October, Drop Dead Twice, Dublin 8

What could be better than an evening of whiskey and cheese. Head along to Drop Dead Twice where your host Peadar MacEiteagain will guide you through this glorious pairing, sampling 6 whiskies and their complementary cheeses.

 

The Dinner @ Fumbally – Sunday 28th October, Fumbally, Dublin 8

An all star line up is gathering at The Fumbally at the end of the month to host The Dinner. Jess Murphy, Carmel Somers and Rose Greene will serve up a 6 course menu and there will be accompanying wines available to buy on the night too. This is the 2nd night added to the event, the first one on the Saturday evening sold out in no time and it’s likely this one will go pretty quickly too.

So far we’ve started to compost all of our coffee grinds and use on our rooftop bars as well as reducing our single use waste like plastics, coffee cups and blue roll.

This week, we’re looking at our electricity usage and how we can reduce and save our draw on power (and our ESB bills!)

To start off, we’re taking readings of the meters in all the bars at the start of the week, and measuring again the following week to see what we’re currently using. Now that we’re coming into the cold dark Winter days, we’re going to have to work hard to keep usage down because we’ll need that bit more light and heat. The first thing we can do is switch our bulbs over to LED and that should help out in a big way as they’re such a low draw on power. We’re looking at ways to warm the office and keep the heat in, so we’ll be adding heavy curtains to the draughty windows which will hopefully look stylish too.
